Sommelier Certificate Program

The Sommelier Certificate Program is an intensive, professional development program covering the fundamentals of food and beverage pairing, service and management, and sensory analysis. It incorporates lectures with tastings of wine, spirits, and beer. The program consists of three, four-credit courses, offered spring quarter at Central Washington University’s Ellensburg campus. It takes ten weeks to complete. Participants must attend all sessions and dedicate time to projects and assignments. Completing the program requires substantial out-of-class time.

Description of Coursework

Fifty percent of wine consumption occurs in restaurants and other retail venues. The CWU Sommelier Certificate Program addresses the selling and serving of wine and other beverages, such as beer, spirits, sake, and coffee, in dining situations, along with proper cellarmanship techniques. Because sommeliers must be able to choose an appropriate beverage to accompany food, the program incorporates the fundamentals of food and wine pairing, while providing an overview of beverage and service standards for dining establishments. Students will have opportunities to learn sensory analysis skills through tastings of wines and beverages from around the world. Major Wine Regions of the World, GWS 303, must be taken prior to or in conjunction with the certificate courses.

Pre-requisite: GWS 303: Major Wine Regions of the World – 3 credits. Must be taken prior to or in conjunction with the certificate.

GWS 405: Food & Wine Pairing for the Sommelier – 4 credits
GWS 407: Beverage and Cellar Management for the Sommelier – 4 credits
GWS 409: Applied Professional Sensory Analysis – 4 credits

Applicants must include a short essay about his or her reasons and goals for enrolling in the Sommelier Certificate Program. Financial Obligations

Tuition is $300 per credit for these GWS courses. Additional course fees and costs may apply. Since courses are self-support, there are no tuition waivers.

Faculty

Amy Mumma - Program Coordinator for CWU’s World Wine Program, Amy is also an instructor and advisor for the Global Wine Studies major. She holds an MBA in wine studies from the Bordeaux Business School in France, the Advanced Certificate from the Wine and Spirit Education Trust of London, the Diploma of Tasting from the Université de Bourgogne in Dijon, France, and a bachelor’s degree in foreign languages and international affairs from the University of Puget Sound in Tacoma, Washington. A highly sought-after speaker and lecturer, Mumma, who won the prestigious Professional Wine Woman Award in 2005, is internationally recognized for her wine expertise and expansive knowledge of the worldwide wine industry.

Cara LeDuc - Cara LeDuc is a Washington native and graduate of Central Washington University’s World Wine Program. With a bachelor’s degree in Global Wine Studies, the Wine Trade Professional certificate, the Sommelier certificate, and a minor in administrative management, Cara has a broad base of knowledge about the business of wine. Her education is backed with many years working in the wine industry in a variety of positions including assistant to the winemaker and tasting room supervisor. Her passion has also taken her to Tuscany to study both traditional and modern winemaking practices. Cara runs her own consulting firm, Liquid Planning, which helps small and start-up wineries and breweries with strategic marketing and branding development. Since wine and food go together, Cara has sought training from several head chefs in both Washington and Italy, and writes about food and beverage pairing and management. Cara has recently joined CWU as a lecturer in World Wine Program.
